Sweet Potatoes and Ginger are a fantastic pairing and there are lots of great dishes to make from them like soup, mashed with ginger and a little maple syrup. Here’s one that is very easy and delicious.

 

3 large sweet potatoes

1 tsp grated fresh ginger - or more if you love ginger

2 Tbls olive oil

salt and pepper

Peel potatoes and cut into half medallions. Place on oiled baking sheet and drizzle with olive oil. Sprinkle with ginger and coarse salt and lots of pepper. Place in 425 degree oven for 30 minutes or until tender. Can be left longer to increase the crunchy factor. I’m going to have those for dinner!
