Cynthia's Kitchen - Spinach and Eggs

This is a season of plentiful eggs so heres a recipe for eggs and spinach.

Pre-bake a pie shell until just starting to brown. Take out of oven. Set oven to 350 degrees. Add some parmesan, cheddar, or any cheese you like. For one pie shell, 1 cup of grated cheese is good. Then add some sautéed spinach. You can also add onion, mushroom, whatever you have. Whisk 5 eggs in a bowl.  Add two cups of half and half or rich milk. Add salt and pepper and whisk. Place pie plate filled with your cheese and vegetables into the oven and carefully pour the milk/egg mixture over it. Bake until pie is set so that a knife stuck in an inch from the edge comes out clean. Remove and let sit at least 10 minutes. Enjoy with a fresh salad from Darthia Farm.
