Cynthia's Kitchen - Easy Summer Meals

This is a great time of year for easy meals right out of the garden. One of my favorites is this one:

Slice a tomato and a cuke. Arrange on a small plate/platter. tear a few basil leaves for the top. Add some sliced fresh garlic and a few chopped scallions. Pour a little olive oil and vinegar over the top. Serve with a nice bread and you have the perfect summer meal.

And try this easy idea for zucchini;

Toss 1/2 inch zucchini slices with olive oil, salt and pepper, some chopped fresh herbs, and about 2 Tbls. Parmesan cheese. Place on a baking sheet and top with more Parmesan. Bake in 425 degree oven 5 minutes. Turn on broiler and broil a few minutes until cheese is melted and zucchini is tender crisp.

You can also eat Zucchini raw - try grating into salad or making sticks that you can dip into something interesting. It’s low in fat and sodium, but high in fiber and potassium, helping to maintain healthy blood pressure.

One of my favorite zucchini meals is zucchini cut in half lengthwise, brushed with olive oil, grilled until tender and browned. Then I slather it with some pesto and goat cheese. It’s easy and delicious and good for you.
