Fresh Tomato Salsa

You can make this just with a knife or in a food processor. If using a food processor, just lightly pulse or you will have soup!

I cut four big tomatoes into quarters and just set in strainer for a half hour or so to get rid of some of the water.

Then cut up (with processor or knife) tomatoes into small pieces, 2 cloves or more of garlic - chopped, up to one hot pepper - chopped, as much cilantro as you want (we love cilantro so use a lot), 2 -5 scallions - chopped, salt and pepper, I add a little ground cumin and some lime juice.

Stir in bowl and let sit so the flavors meld.

You can’t buy this good a salsa in the store.

Salsa isn’t just for chips. Try it on eggs, potatoes, over rice. It will keep in the fridge for quite a while if you don’t eat it all.
