Cynthia's Kitchen - Cabbage Slaw

 

2 Tbls hot sauce

1/2 tsp red pepper flakes

2 garlic cloves - crushed and chopped

1/2 tsp kosher salt

1/4 tsp cayenne

1/4 cup good oil

5 Tbls peach juice/jam

Pepper

 

2 stalks celery, chopped

2 scallions, chopped

1 head cabbage, thinly sliced

Whisk vinegar, peach, oil, hot sauce, pepper flakes, garlic, salt, cayenne, pepper in large bowl. Add cabbage, celery, and scallions. Cover and chill 30 minutes or more.

There are many ways to prepare cabbage slaw. Try soy and sesame oil with garlic, mayo and seasoning, vinaigrette, etc.

We love to just quarter the cabbage, core it, and steam until tender, about 1/2 hour. I put butter on it. Kind of decadent but delicious with a little salt and pepper.

And, of course, you can’t beat cabbage in a soup!
