Cynthia's Recipes - Snow Peas

I love sautéd snow peas but I love them raw, too. Here’s a very simple recipe for sautéd snow peas.

 

Mince one garlic scape. Take off the stem end of the snow peas. Heat some olive oil in a frying pan. Add garlic scape and stir for a minute. Add the snow peas and stir for a minute or two. You want them to still be crisp. Add a little tamari or soy sauce and a drop or two of sesame oil if you want. There are simple and delicious and can be served hot or cold.

 

OR

 

Heat wok until very hot. Add snow peas and chopped scallions. Stir until lightly charred - 2 - 3 minutes. Add chopped garlic scape and sesame oil. Toss and cook one more minute.

 

OR

 

Bring a pot of water to a boil. Drop in snow peas. Blanch for no more than 1 1/2 minutes. Drain and rinse with cold water. Melt butter in pot. Add some lemon juice and chopped thyme. Add the blanched snow peas and stir until peas are hot.
