Cynthia's Recipes - Summer Squash

Summer squash on its own doesn’t have a lot of flavor, so it’s the perfect vehicle for some other deliciousness. My favorite way to cook summer squash is to cut it in half, lengthwise, brush it with some garlic scape flavored oil, and grill on both sides until browned and tender. Then I slather it with goat cheese and pesto. You can build a whole meal around this beautiful presentation.

 

If you don’t have pesto or goat cheese, sliced summer squash, just sautéed in oil or butter with some chopped garlic scapes, and sprinkled with cilantro when tender, is delicious.
