Apple Wood Smoked Cayenne Pepper Powder - We dried a bunch of our cayenne peppers last autumn and hung them in the smokehouse that was fed with applewood.  After 3 days, we removed the peppers, dried them again, and ground them down into a powder.  Great in/with just about anything.  A little bit goes a long way.
