Cynthia's Kitchen - Chicken in Hay
3-4 lb chicken
1 ½ tsp fine sea salt
½ tsp pepper
1 T olive oil
5 – 6 handfuls organic hay – 12 cups
2 cups water
season chicken with salt and pepper and massage with Olive Oil.
Let sit at room temp for 1 hour.
Cover bottom of 6 – 7 qt dutch oven with 3 inches hay. Nestle chicken in center and arrange hay on sides like a nest. Place over high heat for 1 – 2 minutes and pour in water. It will steam. Cover. Turn heat down to medium low and cook 30 minutes
Remove lid and check to make sure there is still some water. Add if needed. Cover again for 30 – 40 minutes until chicken is tender. Hay will be deeper yellow-brown but not burnt. Check a couple of times – not too much. You can turn heat to low and add ½ cup water if needed. Serve from hay nest.
