I’ve talked to a number of folks who are afraid of cooking eggplant. Perhaps it’s because you really need to salt it to get out some of the moisture before you cook it. Here are a couple of ideas. OVEN ROASTED EGGPLANT Slice eggplant in half lengthwise. Score the flesh deeply in a diamond pattern with two or three long cuts. Someone turned up the heat this week, and it was just what many of the plants in the gardens needed.  The summer squash is finally sizing up and the pea patch is now exploding with peas.  We uncovered our patch of fall brassicas (cabbage, broccoli, cauliflower, brussels) and gave them a first cultivation.  Our second planting of green beans is also in that same garden, along with autumn beets and carrots, which have all germinated beautifully.  All the plants look great, but we had a deer wander into the garden last night and do some nibbling.  Not much damage, but...
