We've swung full circle to the height of summer heat this past week.  This means that the scales are tipping on the tomato patch and we are seeing more ripening every day.  It also means that the squash and beans have put out a great deal of fruit this past week.  We ripped out our pea vines, took down the trellis, and are preparing to cover crop that garden for the rest of the season to prepare for winter and next year.  Our raspberry plants that were planted last year have put out their first bit of fruit.  If we...

Cucumbers - These are the perfect fix for the hottest part of a summer day.  Cut into spears and dipped into kale scape pesto has been our favorite snack. Shave a couple of zucchinis/summer squash with a mandolin or vegetable peeler. Core and shave a small head of fennel, Toss zucchini, torn mint leaves, a cup of shaved pecorino cheese (or Parmesan), juice of one lemon, and two Tablespoons olive oil. Season with salt and pepper. It seems that a switch went off in some of the crops and the fruits are coming on!  The summer squash, cucumbers, and greens beans dropped into the mode of productivity in a matter of a couple of days of dry heat.  A less desirable switch went off in the sweet corn, and that was to send out tassels.  Normally that's a great sign, but only if the corn has had the conditions to grow up tall first.  Due to the extremely cool and wet conditions earlier this season, our sweet corn is only about knee high, so the tassels...
